Yielded at 7 tonnes per hectare. Fermented in small batches with partial wild yeast and extended maceration. Matured in 100% French oak 500L puncheons and 300 L hogheads for 18 months. 30% new. An astonishing 12 separate clones of Shiraz from our estate vineyards across the Adelaide Hills make this a layered, complex wine. Barrel selection prior to bottling at the estate.
Displaying aromas of red cherry, blackberry and olive with layered spices. Leading to a palate of generous flavours of dark chocolate, fresh raspberry and white pepper. Rich and silky tannins linger on the palate with seamless persistence.
