This exceptional cool-climate Shiraz was sourced from selected vines, hand crafted and bottled at Sidewood’s family-owned winery. Individually selected parcels were left for an extended maceration on their skins, followed by wild yeast fermentation in 100% French oak barrels. The wine was then allowed to mature for a further 15 months before barrel selection and the final blending. Aromas of dark plum, blackcurrant, bitter chocolate and a touch of allspice lead to a generous fruit-driven palate with hints of white pepper, violets and seasoned leather. Rich, silky tannins linger on with seamless persistance. Delicious on its own or as a versatile partner to beef short-rib, lamb ragu or porcini pasta.
