This complex Pinot Gris is handmade in a traditional style. Fruit was 100% hand-picked over a two-week period from selected rows at our Oakbank vineyard. Perfectly ripened grapes were chilled prior to being 90% whole-bunch pressed, the free-run juice was then barrel fermented and matured for 5 months using wild yeast in 100% larger format French oak.
Aromas of tangerine, lemon rind and talc lead to a balanced textural wine, displaying flavours of grapefruit and Nashi pear, accented by notes of orange blossom and long, mineral-led finish.
A wine suited to seared scallops, rabbit terrine and Thai salads.
