The 2015 vintage delivers remarkable elegance and complexity, with finely layered notes of brioche, preserved lemon and toasted hazelnut.

TASTING NOTES

Fine and complex, with aromas of lemon rind, pear and subtle brioche. The palate is rich yet precise, showing citrus, creamy texture and a delicate saline edge, finishing long and refined.

VINIFICATION

This wine begins with hand-picked Chardonnay from our Mappinga Road vineyard in the Adelaide Hills. Sourced from renowned Dijon clones B95 and B76, the fruit was harvested at low yields to maximise concentration and character. Fermentation took place naturally in French oak barrels, with a portion of new oak adding subtle complexity. Full malolactic fermentation and gentle lees stirring helped create a rich, textural palate while maintaining elegance and freshness.

VINTAGE CONDITIONS

The 2015 Adelaide Hills vintage combined a dry growing season with mild summer conditions, producing fruit of exceptional concentration, vibrant natural acidity and outstanding varietal expression. Widely considered one of the region's best vintages of the decade.

What is “Méthode Traditionelle”?
This is a sparkling winemaking process where the second fermentation occurs in the bottle.

Is this Champagne?
No, but it’s made using the same method with a similar quality focus.  

What is a late-disgorged sparkling wine?
A late-disgorged sparkling wine remains on its yeast lees for an extended period before the sediment is removed. Ten years of lees ageing creates greater complexity, finer bubbles, richer texture and distinctive brioche and toasted nut characters while preserving freshness and elegance.

Is it sweet?
No, very dry (low dosage).  
Dosage is the small amount of wine and/or sugar solution added to a sparkling wine immediately after disgorgement and before the final cork is inserted.

Can it age? 
Yes, it will continue to evolve with added complexity over time.
