TASTING NOTES

Lifted aromas of citrus, nettle and fresh apple. The palate carries bright flavours of gooseberry, lemon peel and grapefruit layered over subtle mid-palate texture. The finish is crunchy with Granny Smith apple acidity delivering a clean, crisp and refreshing finish.

VITICULTURE & VINIFICATION

Fruit was sourced from Sidewood's Adelaide Hills vineyards in Oakbank, with parcels harvested over a two-week period to achieve optimal ripeness. Grapes were cooled immediately after picking, gently pressed and fermented before extended lees ageing in stainless steel tanks. Following vinification, the alcohol was carefully removed using spinning cone technology to preserve freshness, flavour and varietal character.

VINTAGE CONDITIONS

Cool Adelaide Hills growing conditions and yields below 10 tonnes per hectare encouraged concentrated flavours, bright natural acidity and expressive aromatics, creating an ideal foundation for premium alcohol-free Sauvignon Blanc.
