VINIFICATION 

Hand-selected fruit yielding 7 tonnes per hectare was wild-yeast fermented using partial whole-bunch and whole-berry techniques, followed by extended maceration. Matured for 18 months in French oak (300L puncheons and 500L hogsheads, 35% new), with careful barrel selection prior to estate bottling.

VINTAGE CONDITIONS

Cool-climate Adelaide Hills conditions supported slow ripening and flavour concentration, preserving natural acidity while building structure and aromatic complexity.
