A benchmark traditional method sparkling Chardonnay from the Mappinga Road vineyard, crafted from Dijon clones and matured for six years on lees. With only 2,100 bottles released, this first disgorgement showcases depth, precision and exceptional complexity.

TASTING NOTES

Fine and complex, with aromas of lemon rind, pear and subtle brioche. The palate is rich yet precise, showing citrus, creamy texture and a delicate saline edge, finishing long and refined.

VINIFICATION

Made from handpicked Chardonnay grapes, gently pressed as whole bunches for purity. Naturally fermented in French oak barrels to add texture, then aged on lees in bottle for six years to develop complexity and fine bubbles. A small dosage is added at disgorgement to balance freshness and flavour.

VINTAGE CONDITIONS

Cool Adelaide Hills conditions allowed slow ripening, preserving acidity and finesse. Careful vineyard management and low-intervention winemaking highlight site purity and structure.

"The Cassandra is classically 100% Dijon clone Chardonnay from the Sidewood Oakbank estate vineyards, at first fermented in French oak hogsheads for under a year before second ferment and 5-6 years maturation in bottle. Vintage conditions can have a surprising impact, sometimes prompting extrovert characters or in this case a quite subtle personality. There’s a lovely, delicate gingery note to the Chardonnay, oak showing a light touch, while a house styled tonic bitterness remains in place as well. The wine is tightly coiled at the moment, poised and inviting, acidity and flavours in balance which bodes well for a more expressive future."
