VINIFICATION 

Crafted from a single vineyard at Mappinga Road using hand-picked, sustainably grown fruit. Only free-run juice was used, with fermentation conducted on full solids using wild yeast. The wine was matured for 8 months in French oak (25% new, balance seasoned) across 300L hogsheads and 500L puncheons, building texture and complexity while retaining varietal purity.

VINTAGE CONDITIONS

Cool-climate Adelaide Hills conditions supported vibrant acidity, aromatic intensity and structured ripening, allowing for a balance of freshness, texture and flavour concentration.

"There are 30% new and 70% 1-year-old French oak barrels employed here for maturation. Spends eight months in wood. Serious-feeling white wine. Scents of sandalwood, preserved lemon, passionfruit, ginger and white pepper. The palate is concentrated yet refreshing in nature, slick with woody spices, deep in lemon and passionfruit flavours, with distinct vanilla and white pepper spice following. Smooth, supple and long. Feels complex and yet vibrant. A treat. And good for cellaring to reveal more complexity."
