Sidewood Estate purchased the former Adelaide Hills Winery located in Nairne in March 2014. The renamed Sidewood Winery is a state of the art winery that was the original site of Mayhem and Co. The Sidewood Winery is managed by renowned Darryl Catlin who’s work was recently awarded ‘Best Red Wine in Australia’ from 2014 International Wine Challenge.

Wine making facilities

The Sidewood winery is a modern facility built for small to medium size batches of fruit specific to the needs of the Adelaide Hills. We offer a premium service that is about quality and the best of everything.

Our winery is equipped with 3 state of the art temperature controlled cool rooms that can both heat and chill. We have a range of tank sizes suited to all needs as well as different sized fermenters from small open fermenters that can be pneumatically plunged, Hand plunged to 10 tonne closed fermenters. All of our stainless steel tanks have heating and cooling. We have a cutting edge cross flow filter to gently filter your wine to final stages of bottling. We have a choice of presses including 2 airbag presses, one being a Bucher XP, which uses Nitrogen to exclude air during the pressing program, a small 5 tonne Siprem airbag to a 2 tonne traditional, all stainless steel basket press. We have a sorting table should you wish to hand sort your fruit to achieve the optimum in quality.

We aim to be a winery that uses minimal water and the use of Nitrogen in most of our process. This can be done because of our state of the art Nitrogen generator that will allow us to not only use during fruit processing but also right through to filtration stage. This will be particularly helpful for Dissolved Oxygen Management and will eventually allow us to empty barrels with gas, thus reducing wine pumping.

Making wine with us will be easy. You will have the choice of driving the style and wine making or choose to work with Darryl Catlin, our Experienced Adelaide Hills Winemaker and his team to help guide you and your wine to be the best it can be. Cider making facilities

At Sidewood Winery, we are also specializing in Cider making. With our State of the art mill and processing facility, we can cater to most styles of cider making. We can process your apples or contract juice for you to make cider. This will include the ability to keg on site.
